A Vegan Dish
Ingredients-
2 cups white wine vinegar 1 pound waxy potatoes Cut potatoes into ¼ in. slices 2 tbsp. extra virgin olive oil 1 tsp. flaky sea salt, add extra for seasoning ¼ tsp. ground pepper
Grilling-- Pour vinegar into a medium saucepan Stack potatoes so they are fully covered in vinegar Bring vinegar to a boil Then reduce the heat to simmer for 5 minutes until tender Keep firm enough to keep shape when being grilled Cool potatoes for 30 minutes Drain thoroughly then toss in olive oil, salt and pepper Heat grill to Med-High Cover potatoes, grill until golden, then flip to grill other side Serve lightly sprinkled with salt.
